Stir until the sugar melts and forms a simple syrup.<\/li> Add the ground almonds and stir for 2 minutes. Remove from the heat and let cool.<\/li> Add in the egg white and stir to fully incorporate. If it is very thick, add a splash of water.<\/li> Put the mixture into the refrigerator and let chill for 2 hours.<\/li> Preheat the oven to 200\u00ba Celsius (390\u00ba Fahrenheit).<\/li> Use a spoon to form the marzipan into 30 small balls, then roll each one in the pine nuts to coat.<\/li> Whisk the egg yolks together with a few drops of water.<\/li> Place the panellets on a baking sheet and brush them with the egg yolk mixture.<\/li> Bake for about 5 minutes until golden brown.
